柳原料理教室は、東京・赤坂で70年続く日本料理の料理教室です。

近茶流宗家 柳原尚之
たとえば、ほうれん草のおひたし。なんてことないようでいて、とても奥深い料理です。
色よく茹でたほうれん草を、巻き簾を使って程よく水気を絞り、器に形よく盛る。これだけで、りっぱな家族へのおもてなし料理です。
そして、器、盛り付けを変えれば懐石料理にもなります。
日本料理とひとことで言っても、寿司や天ぷらからお茶の席で出る懐石料理にいたるまでさまざまです。しかし、わたしはどんな料理でも基本は同じだと考えています。基本を丁寧に学んでいけば、 家庭でいただく料理が、きっと心豊かなものになっていくことと思います。
食材の下準備、切る技術をはじめとした料理法、盛り付け、器などを意識して身につけていくことで、料理はかならず、おいしく、美しく変わるものです。
わたしは料理がもつ「ストーリー」を大切にしています。その料理がどのように生まれたのか。暦、土地、食材、時代。どの料理にもその背景があります。そして年中行事、作法、古くから日本人が願いをこめてきた節句料理。そういったレシピだけでは表すことのできない料理のストーリーも、皆さんとともに共有できたら嬉しく思います。
日本料理のおいしさ、美しさ、楽しさを皆さんと分かち合い、そして残し伝えていくことが私の願いです。

9月ーなす【茄子】
茄子は、日本人が大好きな野菜のひとつです。「茄子紺」と呼ばれる深い紫色は、ほかの野菜にはなかなか見られない美しい色。この色合いもまた、茄子のご馳走のひとつです。

8月ーきゅうり【胡瓜】
きゅうりはとても歴史の古い野菜です。遣唐使によって日本へ伝わったといわれています。しかし、意外なことに、私たちが今のように日常的に食べるようになったのは江戸時代の後期から明治時代にかけてのこと。それまでは、あまり人気のある野菜ではありませんでした。
江戸時代の本草学者・貝原益軒も、きゅうりについて「あまり美味しいものではない」と記しています。当時は、現在のように青く若い実ではなく、熟して黄色くなったものを食べることが多かったそうです。そのため、「黄色い瓜」と書いて「黄瓜(きうり)」と呼ばれるようになり、それが現在の「きゅうり」という名前の由来になったといわれています。

August - “Cucumbers”
Cucumber has a surprisingly long history in Japan. It is believed to have been introduced from China by the ”Kentōshi,” the Japanese diplomatic missions that traveled to Tang China between the 7th and 9th centuries. Yet despite its early arrival, cucumbers did not become an everyday vegetable until the late Edo period (the mid-1800s) and the beginning of the Meiji era (late 19th century). Before then, they were not especially popular.
